Whole Wheat Apple Hand Pies

If you have some apples, this is an easy fall snack (or even breakfast) recipe to have on hand (and you don’t have to make the dough!)

By using whole wheat rolled pie dough by Wholly Wholesome, I cut a big step out of process. All I had to do was cook down the apples, cut the dough into circles, form into pies and bake.

This makes about 10 pies. You can store leftovers in the fridge and then warm up in the mircowave/toaster oven, and freeze the rest (thaw in the fridge when ready to eat). Serve with a drizzle of pure honey or yogurt. 

 

Ingredients

  • 3 medium-sized apples, peeled and diced topped with a squeeze of lemon

  • 2 tbsps ghee or unsalted butter

  • 1/4 cup pure maple syrup

  • 1.5 tsp cinnamon

  • 1 tsp nutmeg

  • 1/2 tsp cardamom

  • 1 tsp vanilla

  • 1 pack of Wholly Wholesome whole wheat pie dough (you get 2, 9” rounds)

  • 1 egg, beaten

Instructions

1. Prep dough according to instructions (mine was frozen so had to thaw before using)

2. Melt ghee/butter in a large pan

3. Add apples, syrup, spices and vanilla to the pan and mix to combine

4. Let cook for 5 mins over medium heat, stirring occasionally (you want the apples to have a bite, not be mushy)

5. Let cool for 30 minutes

6. Meanwhile, preheat oven to 375, line a baking sheet with parchment paper, and prep your pie crusts!

7. Unroll the dough on a board dusted with some flour

8. Dust a rolling pin with flour and roll the dough so it’s slightly thinner than it comes

9. Then using a glass or cutter that is at least 3.5 in wide, cut out an even amount of circles (you can re-roll out dough to get more, you should get around 20)

10. If circles seem warm, place in the fridge for 20 mins to get them cold (which is best for baking)

11. Once apples have cooled and circles are prepped, spoon a small amount on top of one circle, leaving a small border of dough uncovered

12. Top with another circle, seal the edges together and crimp with a fork

13. Complete the rest of the pies and then cut two slits on top of each pie

14. Brush the top of each pie with the egg wash

15. Bake for about 25 mins or until golden brown

16. Let cool on a rack until ready to serve!
