Strawberry Chia Jam
Gearing up to send Jack to preschool! So I made a batch of Strawberry Chia Jam that can be used for different types of sandwiches.
It’s really SO easy to make this! Just by cooking down some berries and adding a little honey, lemon and of course chia seeds. I blended my jam so it’s smoother for sandwiches, but you can make as chunky as you would like.
The jam lasts about a week or two in the refrigerator, so I refrigerated some and froze the rest in a few small batches.
Ingredients
2 cups fresh strawberries, stems removed and chopped
1-2 tablespoons pure honey
Juice of half a lemon
1 tablespoon chia seeds
Instructions
1. Add berries to a small pot and cook for 7-10 minutes over medium heat until they become syrupy
2. Remove from heat and add honey and lemon. Stir to combine and taste (add more honey or lemon if you would like)
3. Stir in chia seeds
4. Let sit for 5 minutes to thicken and cool
5. Then add to a food processor and blend until smooth
6. Transfer to storage containers and place in the refrigerator for a week or two or freezer for a few months
