Lauren Maat : Turkey, Quinoa, Spinach + Apple Meatballs
Ingredients
1 cup cooked quinoa
1/2 cup frozen spinach, broken into small pieces or cooked and squeeze dried
1 pound ground meat (beef, lamb, chicken, turkey, or sausage)
1 large apple grated or shredded in food processor (we use Fuji)
1 egg
2 tablespoons tomato paste
1 teaspoon cumin
2 teaspoons paprika
3 tablespoons extra virgin olive oil
Instructions
1. Preheat oven to 350 F
2. In a large bowl, mix together all ingredients
3. Line a baking sheet with parchment paper or aluminum foil (if using foil, spray with non-stick cooking spray)
4. Form meatballs into 1.5″ balls or into finger sticks for beginner eaters
5. Drizzle or spray extra virgin olive oil on top of meatballs
6. Cook until slightly browned and crispy, about 25-28 minutes
