Summer Corn Pizza
If your little one likes corn AND pizza - then definitely try this recipe out for a summery lunch or dinner!
This is a no-sauce pizza and uses just a few simple ingredients - corn (obviously), mozzarella, ricotta, black pepper, olive oil and basil.
To keep it even easier, I used a pre-baked crust. This is also a great recipe that your toddler can help you with, too. Jack had so much fun throwing the toppings on the pizza (and eating half the cheese, too).
Ingredients
1 cob of corn, kernels removed
Olive oil
Pinch of salt
1 pre-baked pizza crust (I use the Angelic Bakehouse Flatzza Crust)
Shredded mozzarella
Fresh ricotta cheese
Black pepper
2-3 leaves fresh basil, chopped
Instructions
1. Remove kernels from one corn on the cob
2. In a small saute pan over medium low heat, add a drizzle of olive oil, the kernels and a pinch of salt
3. Stir occasionally for 3-4 minutes to start cooking the corn. Set aside
4. On your pizza crust, add the mozzarella (don’t overdo it!), a few dollops of fresh ricotta cheese, the corn, a little bit of black pepper and a drizzle of olive oil over the top
5. Bake according to the crust instructions and until the cheese is nice and melted
6. Remove from oven, top with basil (which if your toddler is anything like mine, will throw off the pizza in disgust, but hey, exposure) slice and serve!
