Coconut Oat Pancakes

These pancakes are perfect for breakfast served with some yogurt or fruit, or even a snack! And bonus - they are ready in less than 10 minutes!

This recipe makes about 8 pancakes, so you can store leftovers in the refrigerator and warm up in a pan when you’re ready to serve.

Ingredients

  • Unsalted butter or ghee

  • 1 ripe banana

  • 1/2 cup whole rolled oats

  • 1/4 cup shredded unsweetened coconut flakes (I use the Let’s Do...Organic brand)

  • 1 egg, beaten

Instructions

1. Melt some butter or ghee in a pan over medium heat

2. In a bowl, smush the banana with a fork until smooth and add in the oats, coconut and egg. Combine with a spoon

3. Place small spoonfuls in pan and shape into pancake

4. Cook on each side for about 2-3 minutes until golden brown
