Pasta with Green Beans, Feta + Pesto

Jack’s favorite sauce is probably pesto! I wanted to add some more veggies to his pasta, so I added some green beans I already had cooked in the refrigerator, with a sprinkle of feta and some lemon zest.

It was a bright, colorful and delicious way to amp up a simple bowl of pesto pasta!

Ingredients

  • Pasta of choice (Banza chickpea rotini shown here)

  • Small spoonful of basil pesto (a little bit of pesto goes a long way, you don’t need much)

  • Handful of cooked string beans, cut in half or thirds

  • Sprinkle of feta cheese

  • Sprinkle of lemon zest

Instructions

1. Cook pasta according to instructions and add to a bowl

2. Mix in pesto, green beans, feta and top with lemon zest

3. Serve!
