Pasta with Green Beans, Feta + Pesto
Jack’s favorite sauce is probably pesto! I wanted to add some more veggies to his pasta, so I added some green beans I already had cooked in the refrigerator, with a sprinkle of feta and some lemon zest.
It was a bright, colorful and delicious way to amp up a simple bowl of pesto pasta!
Ingredients
Pasta of choice (Banza chickpea rotini shown here)
Small spoonful of basil pesto (a little bit of pesto goes a long way, you don’t need much)
Handful of cooked string beans, cut in half or thirds
Sprinkle of feta cheese
Sprinkle of lemon zest
Instructions
1. Cook pasta according to instructions and add to a bowl
2. Mix in pesto, green beans, feta and top with lemon zest
3. Serve!
