Swiss Chard Turkey Meatballs
I’ve tried different variations of turkey meatballs for Jack, but we both really love my latest version made with green Swiss chard that I picked up from the farmers market over the weekend.
They are full of flavor, and extras can be stored in the freezer for meals to come (since it makes around 16-18 meatballs!)
Ingredients
Olive oil
1/2 small yellow onion, finely chopped
2 garlic cloves, minced
1 bunch of green Swiss chard, ribs removed and leaves chopped finely
1 egg, beaten
1/2 cup panko breadcrumbs
1/2 teaspoon salt
Pinch of black pepper
2 teaspoons dried Italian seasoning
Small handful of Italian parsley, chopped
1 pound ground turkey
Instructions
1. Preheat oven to 375 degrees
2. Line a baking sheet with foil
3. Heat olive oil (enough to coat the pan) in a medium skillet over medium heat
4. Add onion and cook for about 5 minutes until softened
5. Add garlic and cook for another minute
6. Add Swiss chard and cook for another 3-4 minutes
7. Remove from pan and place in a bowl to cook slightly
8. In a separate large bowl, add the egg, panko, salt, pepper, Italian seasoning, parsley, ground turkey and Swiss chard
9. Mix with hands (if it seems too wet, add some extra panko)
10. Form turkey mixture into golfball-sized balls and place on baking sheet
11. Place in oven and bake for 15-20 minutes, or until the outside is slightly golden and meat is cooked through
