Fudgy Chickpea Bars
If you’re like me and are fully stocked up on canned beans, here is a power-packed snack that will make great use out of a can of chickpeas.
The chickpeas and oats make the base of this bar (holds everything together) and the pure maple syrup adds some sweetness. You can then add whatever other ingredients you have in the pantry to make the rest of these fudgy and delicious bars.
I added peanut butter, raisins, flax, sunflower seeds and coconut flakes. Dried cranberries, chopped nuts, even dark chocolate chips would be good! Get creative and make use out of what’s in your kitchen.
What’s also great about these is that they are no-bake. Just keep in the refrigerator and take one out at snack time.
Ingredients
1/2 cup whole rolled oats
1, 15 oz can of chickpeas, drained and rinsed
1/4 cup peanut butter
1/4 cup pure maple syrup
1/4 cup raisins
1/4 cup ground flax
1/4 cup sunflower seeds
1/4 cup unsweetened coconut flakes
Pinch of salt
Instructions
1. Line a 9x5 inch loaf pan with parchment or wax paper
2. In a food processor, blend up oats until they look like a coarse flour
3. Then add chickpeas, peanut butter and maple syrup. Blend until totally smooth
4. Then add raisins, flax, sunflower seeds, coconut flakes and salt
5. Blend until everything is combined
6. Using a rubber spatula, add mixture to loaf pan, making sure it’s evenly distributed and smooth
7. Cover with plastic wrap and place in the refrigerator for at least 4 hours
8. Once set, remove from pan, take off parchment or wax paper and slice into bars
9. Store in an air tight container in the refrigerator
