Peanut Butter Banana Ice Cream
If you’ve got some ripe bananas in your kitchen, you can easily make some homemade ice cream. Peel them, slice them up, and store in a freezer safe bag. Then after mixed with some oat milk and peanut butter, you’ve got yourself some ice cream!
Now you can totally just blend up the frozen bananas, but I love adding a little more flavor and creaminess that the oat milk and peanut butter gives. You can also use almond milk or whole milk (whatever milk you prefer, really) and a different type of nut butter (or just leave that out and use bananas and milk). Basically, get creative with whatever you have at home using the frozen bananas as your base, but this is what we love in our house.
My recipe below will give you about 2 cups of ice cream and you can store leftovers in a freezer safe container. Note it will be very hard straight out of the freezer, so let it thaw a bit before you’re ready to eat.
Ingredients
2 bananas, sliced and frozen
2 splashes of oat milk
1 big tablespoon of creamy peanut butter
Instructions
1. Add all of the ingredients to a Vitamix (or high-powered blender) and blend (starting out low and work up to high) until you have an ice cream consistency
2. If needed, use the Vitamix tamper to help break down the banana and get it to blend easier. You can also add another splash of milk to help blend, too
3. Serve in a bowl or ice cream cone!
