Whole Wheat Oat Pancakes
This is probably Jack’s favorite breakfast right now, he requests them regularly!
They are super hearty made with whole wheat flour and oats, which gives you a yummy, filling breakfast. These pancakes are on the thicker side, and nice and soft and on the inside. SO GOOD!
The recipe makes around 8-9 pancakes, so I’m able to have some leftover for the next day which I just warm up in the toaster. When it’s time to eat, I serve with fruit and some pure maple syrup.
Ingredients
1 cup oat milk (or almond milk)
1 large egg, beaten
1 cup whole wheat flour
1/2 cup whole rolled oats
1/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
Ghee or unsalted butter
Instructions
1. In a large bowl, whisk together the milk and egg
2. Add remaining ingredients and whisk until just combined
3. Let batter sit for a few minutes to allow oats to soak in the mixture
4. Add ghee or butter to a large pan over medium heat
5. Scoop 1/4 cup batter onto pan (I usually do 3 pancaked at a time, trying not to overcrowd the pan)
6. Once the top is bubbly and sides are firm, flip and finish cooking
7. Place on paper towel-lined plate and finish cooking remaining batter, adding more ghee or butter to the pan if necessary
