Sarita Gelner : Cardamom Maple Pear Chips

Ingredients

  • 2 firm but ripe pears, like Anjou or Bosc

  • 1 tablespoon pure maple syrup

  • 1/4 teaspoon ground cardamom 

  • 1/4 teaspoon pure vanilla extract

Instructions

1. Prepare 2 baking sheets with Silpat or parchment paper

2. Preheat the oven to 225 degrees

3. In a small bowl, mix together the maple syrup with ground cardamom and vanilla extract

4. Use a mandolin or knife to thinly and evenly slice the pears lengthwise up to the core. Discard the core and seeds

5. Then lay the pear slices out onto baking sheets in a single layer. Brush with half of maple syrup mixture

6. Place in oven and bake for 90 minutes

7. Flip pears over. Brush with remaining maple syrup

8. Bake another 75-90 minutes, until the pears look slightly curled around the edges

9. Then remove pears to cooling racks. They will finish crisping up as they cool completely

Note: These are best enjoyed within one week of making. Store in an airtight container to maintain freshness and crispness.
