Tzatziki Chicken Salad Sandwich
I absolutely love Tzatziki and Jack recently started to enjoy it, so I thought adding it to chicken and making a sandwich would be great for lunch at preschool. It can be served cold and doesn’t require much day of school prep if you make it the night before.
If you’re not familiar with Tzatziki - it’s a Greek sauce typically made with yogurt, cucumbers, garlic and dill. You can pretty much find it at any grocery store now.
This recipe is great for leftover chicken (I used some rotisserie chicken we had) and using Tzatziki takes out most of the work out of making your traditional chicken salad since the sauce already has so much flavor (and is better than mayo in my opinion)!
To add a little more veggies, I grated in some raw carrot (using a zester) and finely chopped up a few leaves of spinach. Mix it together with a drizzle of olive oil and you’re done!
The recipe below should be good for one sandwich. I didn’t go too exact with the measurements, it’s really up to you how much of everything you want! And if you want to make a batch for the week, you can always increase what’s listed below.
And tip! If your Tzatziki is too chunky, you can put it in a food processor to blend up a bit and then put back in the container!
Ingredients
Shredded or chopped cooked chicken (whatever your texture preference is)
2-3 spinach leaves, finely chopped
A large pinch of grated raw carrot
Drizzle of olive oil
A scoop or two of Tzatziki
Instructions
1. Add all ingredients to a bowl and mix until combined
2. Add more Tzatziki if it seems too dry
3. Serve on bread for a sandwich or on its own with some crackers. Leftovers can be stored in the refrigerator for a few days
