Oatmeal Raisin Mini Muffins

These are a great snack (or even an easy breakfast) made with just a few ingredients, and something else you can make with those ripe bananas! No need for flour or sugar.

If you don’t have a mini muffin tin, you can also put in a regular size muffin tin but fill only about 1/3 of the way so they are easier for the kids to eat.

Keep muffins in the refrigerator for up to 5 days or freeze for up to 3 months.

Ingredients

  • Olive oil or non-stick spray

  • 2 large ripe bananas, mashed

  • 1 cups whole rolled oats

  • 1/4-1/3 cup raisins (depending on how many you like)

  • 1 tablespoon chia seeds

  • 1/2 teaspoon cinnamon

  • Pinch of salt

Instructions

1. Preheat oven to 350 degrees and grease a mini muffin tray

2. In a medium sized bowl combine mashed banana, oats and raisins until well incorporated

3. Then add chia seeds, cinnamon and salt. Mix to combine

4. Scoop mixture into mini muffin tin about 3/4 of the way full to make 11-12 muffins

5. Bake in the oven for about 12-14 minutes

6. Remove from oven and let cool in pan for about 5 minutes and then transfer to a wire rack to cool completely
