Whole Wheat Cheddar Crackers
Jack (like a lot of toddlers out there) LOVVESSS crackers, and I thought it was time to test out a homemade version.
These resemble the classic square cheddar cracker, but are made with whole wheat flour and a lot less ingredients. And they taste pretty amazing, too.
This recipe makes about 8-9 dozen, so you'll have plenty for snacks throughout the week!
Ingredients
8 ounces (1/2 pound) white cheddar (not cheese already grated in the bag, get a block which works better for the dough)
1 cup whole wheat flour
4 tablespoons unsalted butter cut into small chunks
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2-3 tablespoons ice water
Instructions
1. Finely grate cheese
2. In a food processor add cheese, flour, butter, salt, onion powder and garlic powder and combine on low speed until it looks like wet sand (about 45 secs-1 min)
3. Then add water a tablespoon at a time through the feed tube and pulse until it forms into a rough dough ball (this will happen quickly!)
4. Remove dough from food processor (using a rubber spatula to help), form into a disk or ball and wrap with plastic
5. Place in refrigerator for at least an hour
6. Preheat oven to 350 degrees and line two baking sheets with parchment paper
7. Roll out dough to about 1/4-inch thickness into a rectangular shape (as good as you can get it!)
8. Cut dough into squares (size of a cracker) with a pizza cutter, removing any scraps or rough edges to the side to roll into another sheet of dough for more crackers (no waste!)
9. With a spatula, carefully remove squares (just a 2-3 at a time) to baking sheet
10. Then take a toothpick and poke a hole in each square
11. Place in the oven and bake for around 15-17 minutes until puffed and lightly golden
12. Let cool completely and transfer to a storage container, these should stay fresh for about a week!
