Lauren Hefez : Power Balls

Ingredients

  • 8-10 Medjool dates, pitted

  • 1 cup of oats (ground up)

  • 2-3 tablespoons of peanut butter or your choice of nut butter 

  • 1/4 cup dried fruit, chopped

  • 1/3 cup chocolate chips

  • Pinch of sea salt 

  • 3 tablespoons of chia seeds, hemp hearts or flax seeds (optional)

Instructions

1. Pit the dates and place them in water just covering them. Microwave for 2 minutes and set aside to cool

2. Blend oats in a food processor until it resembles a course flour. Set aside in a separate bowl

3. Remove dates from water and add to the food processor with 3 tablespoons of the “date water” and your nut butter. Blend to create a sticky paste

4. Add date paste to the oats with the remaining ingredients and mix to combine

6. Scoop out small balls and roll in shredded coconut (or you can leave plain or even dip in chocolate!)

7. Place in the refrigerator for 30 minutes and enjoy!

8. Store leftovers in the refrigerator or the freezer
