Panko-Crusted Fluke Fish Sticks
If you have a fish stick lover in your house, this is a simple way to make a fresh version that your toddler is sure to LOVE.
My husband caught some fluke while fishing over the weekend and this is one of our favorite ways to cook it. It’s a super easy recipe and makes for a great summer meal served with sides like corn on the cob, avocado, brown rice or sweet potatoes.
Ingredients
3/4-1lb fresh fluke (or any flaky white fish), bones removed, rinsed, dried and cut into strips
Avocado or extra virgin olive oil (enough to coat the pan)
1 large egg, beaten
1 cup Panko breadcrumbs (or more if needed)
Salt and pepper (plus a flaky or coarse sea salt for topping which is optional)
Lemon juice
Instructions
1. Heat oil in a large pan over medium heat
2. Beat egg in a bowl
3. Pour breadcrumbs on a plate
4. Sprinkle a little bit of salt and pepper over the fish
5. Coat each piece of fish in the egg (dripping any access egg off of the fish) and then place into the Panko until evenly coated
6. Once oil is heated, add breaded fish to the pan (making sure not to crowd the pan) and cook until golden brown on the bottom
7. Flip and cook a few minutes more until golden on the reverse side
8. Place on a paper towel-lined plate and top with a little flaky or coarse sea salt and squeeze of a lemon juice
9. Continue to cook the rest of the fish, adding more oil to the pan if necessary
