Mara Martin : Chicken Quesadilla + Guacamole
Quesadilla Ingredients
1 cup of shredded cooked chicken
A scoop of fresh salsa (enough to coat the chicken)
¼ cup or handful of sliced green onions
Pinch of cumin, salt and dried oregano
Your tortillas of choice (Food for Life sprouted grain tortillas shown here)
Unsalted butter or ghee, melted
Shredded cheddar cheese
Quesadilla Instructions
1. Preheat oven to 375 and line a baking sheet with parchment paper
2. Combine the first 6 ingredients in a pan over medium heat
3. Cook uncovered, stirring occasionally, for about 10 minutes
4. Brush one side of each tortilla with butter or ghee
5. Place buttered side down on parchment paper-lined baking sheet
6. Scoop mixture evenly on one side of each tortilla
7. Sprinkle cheese over chicken mixture
8. Fold tortilla in half and bake for about 10 minutes or until cheese is melted
Guacamole Ingredients
4 ripe avocados
1 small tomato, diced
½ small onion, diced
2 garlic cloves, minced
A few squeezes of lime juice
Salt to taste
Guacamole Instructions
1. Split avocados in half lengthwise and remove seed
2. Slice avocado into cubes and scoop out of the skin with a spoon
3. Mash avocados in a bowl
4. Add remaining ingredients and stir to combine
