Broccoli Pesto Grilled Cheese
Grilled cheese is a toddler favorite, but I wanted to make one for Jack that not only tasted good, but had healthier ingredients as well.
My Broccoli Pesto Grilled Cheese is made with whole grain bread, Swiss cheese (less sodium than other cheeses, but you can use whatever cheese you prefer), roasted broccoli and basil pesto. It’s colorful, flavorful and one of Jack’s favorites.
NOTE: I find it easier for Jack to eat this when it’s more flattened, so I place the sandwich in the pan, top it with another pan and place a weight (I use my heavy salt container) on top to really smush it down. This results in a crispy, flattened sandwich, perfect for little ones to eat up.
Ingredients
2 slices whole wheat or sprouted grain bread (I use sprouted grain bread by Angelic Bakehouse)
2 slices of Swiss cheese
Handful of roasted broccoli chunks, florets finely chopped
Small spoonful of your pesto of choice (I use basil pesto by Gotham Greens)
Unsalted butter or ghee for the pan
Instructions
1. Place a slice of cheese on each piece of bread
2. Place chopped broccoli on one piece
3. Spread pesto on the second piece
4. Top broccoli side with the pesto side
5. In a frying pan, melt a tablespoon or so of unsalted butter/ghee
6. Add sandwich to pan (use my above tip to flatten the sandwich!) and cook until bottom side is golden brown
7. Flip and cook other side until golden brown and cheese is melted
8. Remove from pan, slice as desired (I remove the crust and cut into triangles) and serve
