Banana Peanut Butter Quesadilla

Jack loves quesadillas, so I made a version that he can enjoy for breakfast, or even as a snack, with two of his favorite ingredients: banana and peanut butter.

In addition to the banana and peanut butter, I included ground flax and shredded unsweetened coconut for some additional nutrients. And bonus: no cooking necessary!

Store any leftovers in the refrigerator and serve for breakfast or snack the following day.

Ingredients

  • 2 taco size whole wheat or sprouted grain tortillas (Sprouted grain tortillas by Food for Life shown here)

  • Peanut butter (I use unsweetened, unsalted)

  • Sprinkle of unsweetened shredded coconut

  • Sprinkle of ground flax seed

  • Half of a banana cut into thin slices

Instructions

1. Spread peanut butter on each tortilla

2. On one tortilla, sprinkle coconut and flax over the peanut butter

3. Top with banana slices

4. Top with second tortilla

5. Cut into triangles and serve
