Tell me about yourself!

I’m a Holistic Health Coach based in Brooklyn NY. My experience with pregnancy opened my eyes to the importance of nutrition. After gaining 82 pounds while carrying my daughter, I began to explore new avenues to better nourish myself and my family. I began by replacing the unhealthy aspects of my diet with whole foods and higher-quality ingredients. The results were a healthier body weight, a better relationship with food, and a happier outlook on life.

What do you love about this recipe, and how has it helped you with feeding your toddler?

These Chickpea Patties are a great way to add a healthy amount of fiber and protein into your toddler’s diet. Perfect for lunch or dinner. They taste delicious in a sandwich with some avocado or on their own. These patties freeze very well and can be reheated in a pan with a little ghee (clarified butter) or olive oil.

What is your biggest tip when it comes to feeding a toddler?

Mealtime should be pleasant and relaxed. I know it can be frustrating when your toddler doesn't want to eat or doesn't want to try different foods, be patient and keep trying.

What is your current eating challenge and how are you working to overcome it/how did you overcome it?

My daughter Carolina wants mac-n-cheese at every meal which can be incredibly frustrating. To add fiber and other nutrients to her diet I’ve been using Jovial pasta which is made with brown rice or cassava (yuca) flour, I steam and blend sweet potato or calabaza squash and combine it with the cheese. I always serve a side of veggies - sometimes she eats it and sometimes she doesn't but the veggies are always there.  

How do you keep your child entertained when prepping a meal?

I like to get her to cook with me as often as possible. I give her responsibilities like taking things out of the refrigerator and helping me prep. She feels like a grown up and she’s excited about eating what we make. Making your toddler feel like they are part of the process is very important and I try to get her involved as much as possible.
