Whole Wheat Bagel French Toast

This is an easy recipe for a hearty and super delicious breakfast using healthy whole wheat bagels instead of bread!

Instead of regular bread, I use fresh-milled whole wheat Mighty Bagels by One Mighty Mill. The result? More flavor, more texture and better ingredients.

And some quick tips for making this recipe! I press the bagels down a bit with my spatula when cooking to make sure all the surface area gets color. Also you can store leftovers in the refrigerator for a few days and reheat in the toaster!

Ingredients

  • 3 fresh-milled whole wheat Mighty Bagels, sliced

  • 3 eggs

  • 1/2 cup oat milk (you can also use whole milk or almond milk)

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • Pinch of salt

  • Unsalted butter, ghee or coconut oil

Instructions

1. Slice bagels in half and place in a large, shallow baking dish so that none of the bagels are overlapping

2. In a bowl, whisk together the eggs, milk, vanilla, cinnamon, nutmeg and salt

3. Pour over the bagels and use tongs to get all of the surface area of the bagels coated in the egg mixture

4. Let sit for at least 30 minutes, flipping a few times to make sure the bagels soak up all of the egg mixture

5. Once bagels are ready, hit a large pan over medium heat and coat the pan with butter, ghee or coconut oil

7. Add a few bagel slices at a time making sure not to crowd the pan

8. Let cook for about 5 minutes or until nice and golden brown and then flip

9. Cook on the other side until golden brown and remove to a plate, repeating with the rest of the bagels

10. Serve as desired
