Egg + Spinach Grilled Cheese
A grilled cheese for breakfast? Yes please! I took a traditional grilled cheese and amped it up with egg and spinach made on Food for Life Ezekiel 4:9 Sprouted Grain Bread.
This bread is always in rotation at our house! The sprouted grains provide some extra protein, and you won’t find any artificial ingredients, preservatives or refined sugar. All good stuff! You can find the bread in the freezer aisle at most grocery stores and now at Target.
Now back to the sandwich! For cheese, I like to use provolone or mozzarella - one with not so much sodium. I add spinach for some veg, but you can use whatever type of veggie your toddler likes (peppers, broccoli, tomato, etc.).
We love this for breakfast served with some fruit, but you can of course make for lunch or dinner.

Ingredients
1 egg
2-3 fresh spinach leaves, finely chopped
Black pepper
Ghee or unsalted butter
2 slices of Food for Life Ezekiel 4:9 Sprouted Grain Bread
2 slices of provolone (or your cheese of choice)
Instructions
1. Beat one egg in a small bowl
2. Add chopped spinach and a pinch of black pepper, mix to combine
3. Melt some ghee or butter in a small pan over medium heat
4. Add the egg and with a rubber spatula, form into a square (making a little smaller than the size of the bread) as it starts to cook
5. After the bottom is set (doesn’t take long, less than a minute!), flip to cook the other side (which will only take 15-20 seconds! you don’t want it overcooked)
6. Remove egg from the heat
7. Next build the sandwich! Place a slice of cheese on each piece of bread and place the egg on, closing it up to cook
8. Place some more ghee or butter in a pan over medium heat
9. Add the sandwich. And here is my trick! I place a piece of foil on top of the sandwich, top with another pan and something heavy (like a can of beans) and push down to help flatten the sandwich so it’s easier to eat (also gives a nice crust to the sandwich)
10. Once golden brown on the bottom, flip and repeat until the second side is browned
11. Remove from pan and cut
