Broccoli, Black Bean and Cheese Quesadilla
Each week, I roast a big batch of broccoli and add it to different meals for Jack almost everyday. His favorite right now being this Broccoli, Black Bean and Cheese Quesadilla! This meal is really easy to make and is full of good stuff for your little one! With the quesadilla, I serve some avocado or roasted carrots and a scoop of plain Greek yogurt.
Ingredients
Unsalted butter or ghee
1 whole wheat or sprouted grain tortilla
A handful of no salt added canned black beans (that have been drained and rinsed)
A handful of chopped up roasted broccoli
Sprinkle of shredded cheddar or mozzarella cheese
Instructions
1. Melt some butter or ghee in a pan wide enough to fit a tortilla
2. Place tortilla in a pan and add beans (smushing a bit with the back of a fork), broccoli and cheese to half of the tortilla
3. Fold tortilla in half and cook on each side for about 2-3 minutes until cheese is melted
4. Cut into triangles and serve
