Baked Oat Chocolate Chip Donuts
Jack loveesss a donut (I mean, what toddler doesn’t?), so I wanted to make a version that was healthier (yes, even with chocolate) and heartier - making it ideal for breakfast or a filling snack.
The oat and whole wheat flour, hemp seeds and oat milk give some good nutrients, and the pure maple syrup and dark chocolate chips add a touch of sweetness.
They are also baked instead of fried and are out of the oven in only about 10 minutes! It’s a very quick recipe, you just need a donut pan (I have this silicone set from Amazon).
Ingredients
1 cup oat flour (you can blend whole rolled oats in the food processor to make your own)
1 cup whole wheat flour
1/4 cup hemp seeds
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup oat milk (I use Three Trees Oat & Seed Milk that is made with just water, oats, flax, pumpkin and sunflower seeds)
1/3 cup pure maple syrup
2 eggs, beaten
1 teaspoon vanilla extract
1/3 cup dark chocolate chips
Instructions
1. Preheat oven to 375 degrees and lightly oil a donut pan
2. In a large bowl, add the flours, hemp seeds, baking powder and salt. Whisk to combine
3. In a smaller bowl, add the oat milk, maple syrup, eggs and vanilla. Whisk to combine
4. Add wet ingredients to the dry ingredients and use a rubber spatula to combine
5. Fold in the dark chocolate chips
6. Scoop batter into donut pan, filling 3/4 of the way full
7. Bake for 10-11 minutes
8. Let cool in pan and then remove and let cool completely on a cookie rack
9. Store in an air tight container
