I am a full time working mom with two daughters who created a food blog to empower other busy families to cook simple and delicious meals. Sitting around a table at the end of the day, without the noise of the world, eating dinner and talking as a family brings happiness to a home.
What do you love about this recipe, and how has it helped you with feeding your toddler?
This recipe is perfect for a weeknight meal because it doesn’t require a lot of ingredients and it’s quick. It’s helped me sneak in some more veggies on those days when my kids are being picky. For lunch, I recommend serving them as is with a veggie and fruit on the side. If served at dinner, I pair them with garlic and butter noodles or in a cast iron skillet with tomato sauce and mozzarella cheese and a side of bread.
One important note is that I do not add salt to the recipe because pork and the crispy onion straws are salty enough.
To keep the texture of the meatball, I use a zester on the zucchini which helps it stay hidden for those picky eaters.
What is your biggest tip when it comes to feeding a toddler?
Expose them to different foods and don’t just serve them the same thing over and over. If they don’t like something one week, try again in a couple weeks.
Also, help them create a healthy relationship with food by leading by example. Balance healthy food with desserts. It’s all about balance. AKA let them eat the brownie :)
